Let me introduce you to Sarah's Lemon Spoon Cake!

I was lucky and honored to be able to do a review on Sarah's new Cookbook, called The Magical Slow Cooker, Recipes For Busy Mom's. Sarah kindly sent me a copy of her book and I was certainly anxious to try some of her recipes.

I have had a slow cooker for about 2 years now, so I am always looking for new recipes to try, but also ones which I know will work every time, given I am not an expert when it comes to slow cooking, I felt quite happy and reassured following Sarah's recipes.

The cookbook itself is made up of over 200 pages, and oh boy, there are recipes galore to suit everyone. From breakfasts to sides, party food to desserts. You really are spoiled for choice.

There are absolutely wonderful photos for each recipe, illustrating what the food looks like and also, they really are droolers! You know, the kind of photos that make you want to eat the book itself!

I always find photos helpful when I see a recipe. Especially if they are recipes I'm not familiar with. It gives me an idea of what I can expect to see at the end.

The quality of the book is also top-notch. Whilst I was using the book, I had it on the work surface and did splash some sticky lemon glaze over it. Gosh, a damp cloth took care of that in a jiffy and the page came clean easily. I like that about a book, that you can wipe it from all your cake finger marks!!

So anyway, after making a list of all the recipes I wanted to try, I decided I would go straight for a cake first.

Many of you will know I am a cake monster and quite particular when it comes to baking. I saw the recipe for Lemon Spoon Cake, read through the ingredients and the instructions, and it seemed easy enough.

Nothing fancy, just plain simple, easy to follow instructions. So I set about making the cake. It took me just under 10 minutes to gather and prepare the ingredients and pop everything in the slow cooker.

The only hard part about the recipe was the waiting! Gosh... the smells when this cake was baking were making my tummy rumble so much!

Once the 2 hours was up, I removed the cake from the slow cooker and of course had to dive right in with my spoon and try some...... the verdict? This cake serves 8 people.... it was so good, 4 of us had double helpings.

Yes, I know that is greedy, but oh boy! It was worth every bite, and the 2 hour wait whilst it was cooking just got your taste buds perfectly ready for serving!

So yes, I would most certainly recommend this book to absolutely anyone!

Whether you're a seasoned Slow Cooker user, or a new cook, perhaps you wanted to give as a gift for a birthday or Christmas, this really would be a wonderful gift to receive.

Price - wise, it is really good value for money. Considering the quality of the book, the multitude of fantastic colourful photos and the number of recipes, this is certainly great value for money.

Ingredients

For The Cake

1 (15.25 oz) Box Yellow Cake Mix *** You can also use our home made yellow cake mix recipe
½ Cup Lemon Juice
½ Cup Water
⅓ Cup Melted Butter
3 Eggs
1 Tablespoon Lemon Zest

For The Glaze

2 Tablespoons Lemon Juice
1 Teaspoon Lemon Zest
1 Cup Powdered Sugar

Instructions

1. Spray a 6 Quart Slow Cooker with nonstick cooking spray, (I lined it with foil and then spray).

2. In a large bowl, combine the cake ingredients and mix until almost smooth. Pour the batter into the slow cooker.

3. Cover and cook on HIGH for 2 hours. The cake is done when firm in the center.

4. Mix the glaze ingredients in a small bowl until smooth. Pour the glaze over the cake and serve with vanilla ice cream.
