I love love great leftover recipes of all kinds. If you know me you have heard over and over again how I hate wasting food, that is where our leftover corned beef recipes comes into play. Not just for after the holiday but year round too. (affiliate links present)
What Can I do With Leftover Corned Beef
Whether you made air fryer corned beef, in the oven or our Traeger corned beef and cabbage the night before any of these will work for a 2nd meal. You can even use canned corned beef to make any of these for a quick and fabulous comfort food bite year round.

I will share a quick homemade air fryer corned beef hash below you can make on the stove in a skillet or air fryer too. That is the most popular of course and what you would think of first. I have a few other ideas though beyond that we will link to throughout this post. From adding it into a casserole, to stuffing a potato it just shouldn’t be wasted.
How long is leftover corned beef good for?
Leftover corned beef can last 3-4 days in the refrigerator until it needs to be eaten. Now if you cooked a frozen corned beef brisket in slow cooker I wouldn’t freeze again. If it started out fresh then you could store in freezer bags and keep for a few months this way. This is our first one we will share, you’ll need;
- 1ccorned beefprecooked and diced
- 3largepotatoeswashed, diced into small bite size pieces
- 1/2coniondiced
- 1/4cbell pepperdiced
- 2tbspolive oil
Once done you can go a step further too. I have tossed in a bit of sour cream when warmed to make it creamy. OMG was that good. I even found a dairy free version so my husband could enjoy this one, this way. Not entirely necessary but just brings it to a whole new level.
To make this we do have instructions listed below in our recipe card but there is a quick look here below too. Air frying is featured but you could also make this over medium high heat on the stovetop. I do love using a cast iron pan for this because that pan just makes the flavors that much more amazing. We love Leftover Corned Beef Casserole too.
You’ll start by preheating your air fryer to 380 degrees for 5 minutes. Toss in some small diced potatoes, onions and peppers with olive oil and pour into basket. Spread them out so it’s in a single layer and can get nice and crispy.
- Cook for 7 minutes, then you’ll want to shake basket to rotate the food inside
- Then cook for another 7 minutes or so until the potatoes are perfectly fork tender to your liking
Pour in your diced leftover baked corned beef, toss and cook another 5 minutes until warmed and as crispy as you’d like. Sprinkle with salt and pepper if desired and serve.
If you have meat left from there I would cook something totally different like Corned Beef and Cabbage Soup for dinner.
What Can be Made with Corned Beef
Think about any of our easy beef recipes, you could use this type with any of those just the same. Make them all with canned corned beef too if that is all you have. Like let’s say you wanted something super cheap and easy. You could make boxed mac and cheese and throw this right in, or make homemade leftover brisket mac and cheese with it.
Just adds protein and a TON of flavor into the mix, all creamy and delish. You can fry it up in a pan with frozen hash browns with a fried egg on top. Served over rye bread is a fabulous breakfast for sure. Want to use this for a version of taco Tuesday?? Do just that, wrap your warmed pieces in tortillas with freshly made fried cabbage for a twist of Mexican and Irish cuisine!!
Leftover Corned Beef Brisket Recipes
We love making this leftover corned beef soup with cabbage chowder. I make this in the Instant Pot but could be made quick and easy in a pot too. You could dice and stuff it into egg rolls with some cabbage slaw. Fry or air fry from there. Corned beef sandwiches are an easy one if you slice it instead of dice it to make a reuben sandwich with Swiss cheese.
Whip up your favorite reuben dip and add this meat in there in little bits to add a ton of flavor. Baked in the oven this is great with crackers or slices of bread to scoop it up. Really any favorite day after meal can use it. You may have a dish that normally uses chuck roast or even chicken. By just swapping out the meat will make it totally different!
Beyond Corned Beef Sandwich Recipe, maybe this year you’ll create a whole new meal that you never would’ve thought of before when thinking outside of the box like this. I mean even avocado toast would be amazing with this diced protein crisped up and layed on top of that. If you come up with a whole new one we haven’t mentioned here let us know below! - 1 c corned beef precooked and diced
- 3 large potatoes washed, diced into small bite size pieces
- 1/2 c onion diced
- 1/4 c bell pepper diced
- 2 tbsp olive oil
