What type of cocoa powder should I use in chocolate cobbler?

While you can use any unsweetened cocoa powder you prefer, I like to use Dutch-process cocoa powder here because there isn’t any baking soda to neutralize the acidity of natural cocoa powder.

How long does chocolate cobbler keep?

This chocolate cobbler can be made ahead of time and then easily heated up in the oven to serve. It will keep well covered in the refrigerator for up to 4 days. It’s a great choice if you are planning to serve it as part of a big feast.

Can I freeze chocolate cobbler?

Yes! If you have leftovers (unlikely!) or want to make this further ahead of time, freezing is a great option. Let the cobbler cool completely before covering with foil and placing in a Ziplock bag. It will keep well for up to 3 months, and should be thawed in the refrigerator overnight before reheating.

Ingredients

  • 1 cup all-purpose flour 120 grams
  • 1⅔ cups granulated sugar 333 grams, divided
  • 6 tablespoons unsweetened cocoa powder 32 grams, divided
  • 2 teaspoons baking powder 8 grams
  • ½ teaspoon kosher salt
  • ½ cup milk 114 grams
  • 6 tablespoons unsalted butter 85 grams, melted and cooled (¾ stick)
  • 1 teaspoon pure vanilla extract 4 grams
  • ¾ cup chocolate chips 128 grams
  • cups boiling water 341 grams
  • Vanilla ice cream optional, for serving

Instructions

  • Preheat oven to 350°F. Butter an 8×8-inch baking pan and set aside.

  • In a medium mixing bowl, whisk together the flour, ⅔ cup sugar, ¼ cup cocoa powder, baking powder, and salt until combined. In a separate bowl, whisk together milk, butter, and vanilla until smooth. Add the wet mixture to the dry mixture and stir to combine into a thick batter. Pour into the prepared baking dish.

    1 cup all-purpose flour, 1⅔ cups granulated sugar, 6 tablespoons unsweetened cocoa powder, 2 teaspoons baking powder, ½ teaspoon kosher salt, ½ cup milk, 6 tablespoons unsalted butter, 1 teaspoon pure vanilla extract

  • In a small bowl, stir together the remaining sugar and cocoa powder. Sprinkle evenly over the batter, then sprinkle on the chocolate chips. Slowly pour the boiling water over the top of the mixture without stirring.

    ¾ cup chocolate chips, 1½ cups boiling water

  • Bake for 30-40 minutes, until the center is just set. Serve slightly warm with ice cream, if desired.
